Harvesting time:
Grapes are picked when completely ripe in early September, then are left on drying racks in the sun for a week.
Vinification method : the grapes are taken off the bunches and left to macerate for about five days. After being taken out of the vat there is slow fermentation till it ceases naturally because of the consistent sugar content remaining.

Serve at a temperature of 12°-14°
Suitable for enjoying not only with the normal pastry and fruit tarts but also with desserts based on chocolate. Another intriguing match may be with very tasty cheeses.

A unique wine, red, sweet and rare, almost unknown to most people, Aleatico dell’Elba is produced at present in very limited quantities!
This wine is made exclusively from Aleatico grapes cultivated on the island of Elba. Harvested when completely ripe during the first few days of September the grapes are left on drying racks in the sun for a week. After that they are taken off the bunches and left to macerate for five days.
This method of production is traditional, similar to the one used on the Mediterranean islands, and gives the wine a decided character and remarkable personality.
