This wine is made exclusively from Aleatico grapes grown on the Island of Elba.
When completely ripe, during the first few days of September, the bunches of grapes are picked and left on drying racks in the sun for a week. Then the grapes are taken off the bunches and left to macerate for about five days. After drawing off the wine from the vat there is a slow process of fermentation which ceases naturally caused by the abundant sugar content remaining. The wine is refined in stainless stain containers and bottled only during the summer after the harvesting. The richness and concentration of this wine may result in a little sedimentation at the bottom of the bottle but this does not influence at all its organoleptic qualities
The wine producing method is typically traditional similar to the ones of the Mediterranean islands, and gives this wine a decided character and remarkable personality.
The colour is quite intense with the typical hues of this kind of dessert wines. The perfume is strong, rich in primary odours, flowers and fruit slightly caramelized; even a hint of Mediterranean brush vegetation.
The taste is really complex with a variety of sensations of fruit and preserves.
The final sensations are of great equilibrium between sweet and acid notes, with a tasty component. This leaves the palate clean and never monotonous, with the persistent memory of fruit and preserves.
Besides the usual match with pastries and fruit tarts this Aleatico wine goes very well with desserts based on chocolate. Another interesting match may well be with spicy cheeses of various kinds.
