Wine Type: Bolgheri Rosso DOC
Area of Production: Castagneto Carducci - Bolgheri (LI)
Grape Varieties: Cabernet Sauvignon 70%, Cabernet Franc 30%,
Production: 55 quintals per hectare, - biological cultivation
Fermentation: grapes left to macerate in the cold (8-10°) for about 48 hours before the fermentation process, alcoholic fermentation with natural local yeasts at controlled temperature, total macerating 21-23 days.
Ageing: in new casks at the beginning of the malolactic fermentation for a 14-16 month period, then 8 months in bottles before sale.
Organoleptic Profile:
Intense ruby red colour, perfume marked with a bouquet ranging from small red fruits to mint and liquorice, rich mineral content. Complex to the palate, full bodied with aromatic smooth tannins, balanced acidity.
Alcoholic Strength: 14%
Suggestions for Food Pairing: excellent with elaborate pasta dishes, tortelli and lasagne, red meat, Tuscan pork dishes (cinta Senese), game.
Serve at 18°C.
